When it’s 🎶Summer Summer Summer Time 🎵😎we want to spend less time in a hot kitchen and more time cooling ourselves off with a refreshing drink on the porch, are we right? Using summer’s bounty of gorgeous stone fruits and berries and cooking them in the barbecue takes fruit salad for dessert up a notch. These Tipsy Grilled Nectarines & Blueberries (alcohol optional) are a simple, assemble-ahead, delicious, and (mostly!) nutritious treat which won over our guests, and will surely woo yours too!

Ingredients for 6 servings:

  • 4 nectarines, halved and stones removed

  • 1 cup (approximately 150 g) blueberries

  • Zest of 1 lemon

  • 3 tablespoons sugar

  • 4 tablespoons Grand Marnier or a combination of 2 tablespoons water and 1 tablespoon lemon juice for an alcohol-free version

  • 1 tablespoon soft butter

Place the nectarine halves in a buttered 8x8 ovenproof dish, with the cut side facing up. Sprinkle over the blueberries, lemon zest, sugar, Grand Marnier or lemon-water, and top with flecks of soft butter.

Place the oven dish directly on the barbecue over medium-high heat and close the lid. Wait patiently for 15-20 minutes or crank up your summer playlist and start a dance 💃🏻party.

(If you don’t have a barbecue, you can bake this in the oven. Bake at 375F/190C for 20 minutes.)

Remove from the oven and serve as is, or with vanilla ice cream. Make sure to spoon over lots of sauce!
