Spinach & Plum Salad with Honey Thyme Dressing

If you’re anything like us, you’ll feel that summer is the perfect time to put fruits in your salad. Enter the Spinach & Plum Salad with Honey Thyme Dressing! There’s something about this tangy-sweet-savory mix that works perfectly when you’re sitting in the sun with a glass of chilled white wine, looking forward to an afternoon reading in a hammock swinging in the shade of a pergola, with maybe a longish nap thrown in... Ok, maybe we’re just daydreaming (or not? 😉) but we can promise that this salad will transport you there, even if it is only for a hot minute!



Ingredients


Two cups fresh spinach

3-5 ripe plums, depending on the size (Whatever kind you can get will work just fine or feel free to substitute peaches if those are more readily available.)

1/2 cup (75 g) sliced onion

1 ripe avocado, sliced

1/4 cup (40 g) salted almonds, pounded with a pestle and mortar to make smaller bits. Alternately you can substitute sliced almonds.


Honey Thyme Dressing


1/4 cup (60 ml) extra virgin olive oil

2 tbsp (30 ml) sherry vinegar

1/4 tsp (16 g) sea salt

1/2 tsp (4 g) honey

1 tsp (2 g) fresh thyme leaves (about 3 sprigs with the stalks removed)


Instructions


Mix all the ingredients for the Honey Thyme Dressing together in a bowl and whisk thoroughly.

Arrange the spinach on a platter. Pit the plums and cut into quarters. Distribute them over the spinach. Then layer on the avocado, onions and almonds. Drizzle the dressing all over the top and voilà! The perfect summer salad.
