Savory Overnight Oats

Everybody and their mother knows overnight oats, right? But we recently got to thinking about how Savory Overnight Oats might be interesting and started experimenting. It was so worth it! If you think the idea is weird, bear with us for a moment! Oats are very neutral in taste apart from a certain nuttiness, so you can pair them with basically anything. Here we’ve made a scrumptious, asian inspired version with miso and peanut butter, topped with scallions, edamame, cucumber, seaweed and more deliciousness. Have it for breakfast if you feel like switching up your routine or save yourself from a #sadsalad desk lunch with this beaut. It totally deserves a try, we love it!



Ingredients


1 cup gluten free oats

3/4 cup almond milk

1/2 tbsp vegetable oil

1/2 tbsp coconut aminos (or light soya sauce)

1 tbsp white miso paste

1/2 tsp cayenne pepper

1 tbsp salted peanut butter


Toppings

1/2 tsp toasted white sesame seeds

1/4 tsp black sesame seeds

1/4 prepared edamame beans

1/4 cup salted peanuts, chopped up a bit

1/4 cup cucumber sticks

1/8 cup chopped scallions

1 tbsp chopped cilantro

1 tsp chopped seaweed

1 tsp puffed rice


Instructions


In a medium sized bowl or container, mix the vegetable oil, coconut aminos, white miso paste, cayenne pepper and peanut butter together to form a paste. Slowly add the almond milk, stirring until it is well blended. Mix in the oats, making sure they are all immersed. Cover tightly and leave in the fridge overnight. When you’re ready to eat, arrange your toppings on top and enjoy!
