We’ve had this Raw Veggie Pizza on our minds since the 90s. (That’s the 1990s, and yes, we’re fully aware how old that makes us sound🤫). It’s time for a flashback and we threw together a new and improved 2019 version, with vegan cream cheese ‘cause we’re off dairy for a few weeks! If you’re not into cutting dairy, then just go ahead and sub in your favorite creamy topping. It’s easy to make ahead and it’s perfect for a potluck, picnic or appetizer. It’s got the crunch of the raw veggies, the creaminess of the ‘cream’ cheese, and that lovely pizza base holds it all together. And who’s not a fan of Everything Bagel Seasoning on just about everything?
1 roll of ready-made pizza dough (we used Pillsbury Pizza Crust, but any crust will do!)
8 oz. vegan cream cheese (we love Kite Hill)
2 tablespoons ‘Everything but the Bagel Seasoning’ (Trader Joe’s or try mixing your own - see recipe below)
1 cup sugar snap peas, sliced
1 cup carrots, shredded
4 scallions (spring onions) thinly sliced
1/2 cup radishes, thinly sliced or julienned
1/2 cup peppers, thinly sliced or julienned
*You can use whatever veggies you like - no rules*
Prepare the pizza crust according to package or recipe instructions.
Combine the vegan cream cheese and bagel seasoning and spread it onto the pizza crust. Sprinkle the raw veggies on top and press them down. Refrigerate at least 2 hours before serving. Season with a little salt and pepper before you cut it into squares. Pack in your picnic basket for your outdoor adventure!
Homemade Everything Bagel Seasoning
2 tablespoons poppy seeds
1 tablespoon white sesame seeds
1 tablespoon black sesame seeds
1 tablespoon dried minced garlic
1- 1/2 tablespoons dried minced onion flakes
2 teaspoons flaky sea salt (we love Maldon for extra crunch!)
