These fabulous Rainbow Nuts deserve a place at any gathering. Spicy, flavourful, crunchy & salty, the perfect accompaniment to cocktail hour!
I must credit this creation to Queer Eye‘s gorgeous Antoni Porowski. Antoni calls them 'Rema’s Nuts', after his best friend. I wanted to call my version 'Antoni’s Nuts' because I wish he were MY best friend 😆. Somehow 'Antoni’s Nuts' didn’t have quite the right ring to it 🤔 😬 so I’m calling them 'Rainbow Nuts' . I’ve included all the different nuts in my pantry so no one’s left out & they’re such colourful eye candy too, dontcha’ think?!
This is EASY - nuts mixed with finely diced red onion, cilantro, lime zest & juice and, of course, a sprinkling of flaky salt & chili. Strut your gorgeous self over to the kitchen, call a friend, shake up a cocktail and make Cocktail Hour happen already!

Ingredients (serves a 6-8 for cocktails)
2 cups lightly salted nuts, one type or a variety. I used peanuts, cashews and almonds.
1 red onion, finely diced
1 bunch of cilantro, leaves only, chopped
1 lime
a pinch of cayenne pepper or chili flakes
a generous pinch of flaky sea salt
Add the nuts to a bowl.
Finely dice the red onion and place in a small bowl, cover with cold water. Set it aside for 10 minutes whilst you prepare the rest.
Chop the cilantro leaves. Zest the lime, add the zest to the nuts. Juice half of the lime and set it aside.
Drain and rinse the red onion, pat dry. Add the onion to the nuts. Add chopped cilantro, 2 teaspoons of the lime juice, a pinch of cayenne and salt. Toss well and season according to your taste!
