Puff Pastry Pizza Bites

These Puff Pastry Pizza Bites are stuffed with pepperoni, marinara and mozzarella. They’re absolutely delicious and easy to make, so minimal work for you!



Last minute Game Day food idea coming in hot! Even if you’re (hopefully!) not hosting anything this year, we all know food is at least half the Super Bowl fun. So I’m going to be making these Puff Pastry Pizza Bites!

My kids have been asking when the Super Bowl is happening for months now and they’re very excited the big day is almost here! I say almost because watching the game live is way too late for them with us being 6 hours ahead of American time. So we’re going to be watching Monday afternoon European time, when all their school work is done and we can get cozy and not have to worry about fractions for the rest of the day.

I’ve ordered a bucketload of American treats as a surprise (Reese’s Peanut Butter Cups, Nerds, Airheads, Skittles, Gatorade and Goldfish, all at prohibitive cost, but it is a once a year occurrence!) and we’ll hunker down and watch the game.

The family is split down the middle as to who we are supporting. We don’t really know what we’re talking about, but the boys are totally into the Buccaneer pirate flag and I’ve been a Mahones fan for exactly a year now and so, by extension, my daughter is too. Let’s hope it’s a fun game. At least I know everyone will love the Pizza Bites! Last time I made them the entire sheet pan was gone in minutes and I got double thumbs up from everyone. They’re stuffed with pepperoni, marinara and mozzarella, how could they not become an instant classic?


I’m going to be ignoring social media all day tomorrow in hopes of not seeing which team won before we watch the game, so if you need me, you’re going to have to actually pick up the phone and call me, old school style! 📞😅

Ingredients

Makes 14 Puff Pastry Pizza Bites, but feel free to double up!


1 roll all butter puff pastry, thawed if frozen but still cold

1/2 cup marinara

14 small pepperoni or salami slices, about 1 inch (or cut up bigger slices into smaller pieces)

1/2 ball mozzarella, cut into 14 equal pieces (preferably low moisture, or place pieces on a kitchen towel before using to get rid of some of the moisture)

1 egg


Preheat oven to 390 F (200 C). Line a baking sheet with parchment paper.

Prepare an egg wash by whisking the egg with a tablespoon of water. Set aside.

Roll out the puff pastry. Cut the roll in half lengthwise with a pizza wheel or sharp knife. Place two rows with seven slices of pepperoni or salami each on the long side of the puff pastry, with about 1 inch (2,5cm) between the rows and leaving about 1/2 inch (1 cm) to the edges. Then place a teaspoon of marinara on each pepperoni or salami slice, then top it with a piece of mozzarella.

Gently place the second half of the puff pastry roll onto the first half, blanketing your little pizza mounds. Gently tamp down the puff pastry between the mounds with your fingers.

Use a pizza wheel or sharp knife to cut the squares apart evenly. Use a spatula to place them, evenly spaced, on the baking sheet. Crimp the edges of each square together with a fork.

Brush a bit of egg wash on each with a basting brush.

Bake for 12-15 minutes or until golden.

Serve immediately!
