These simple and delicious Paté Bites will easily be the highlight of any holiday party. It’s the little extra step of piping the paté and the pretty decoration that elevates this appetizer to the astounded “How Did You Make This?” level! Prepare to make this recipe over and over again.
Ingredients:
28 mini brioche toasts
7 oz (200 g) liver pate (We used Trader Joe’s Truffle Mousse paté)
3 tablespoons of prepared cranberry relish (Stonewall Kitchen’s relish is our choice!)
1 tablespoon ground pink pepper
28 little oregano leaves or 2 tablespoons of chopped oregano
Place the paté in a microwave safe bowl and heat for 20 seconds in the microwave to soften it. Thoroughly mix the softened paté with a fork. Cut the tip off a disposable piping bag and insert a Wilton 2A tip. Fill in half of the paté (it’s easier to handle if you do it in two steps) and twist the wide end of the piping bag to close it. Place the piping tip gently right on the brioche toast and squeeze until you have a little mound. Repeat until piping bag is empty, then refill bag and repeat for the rest of the toasts. Then gently top the paté mound with about 1/8 teaspoon of cranberry relish. Sprinkle a pinch of pink pepper on each toast and top with a small oregano leaf or a little sprinkling of chopped oregano.
