Monday Blues Blueberry Smoothie


It's Monday and we're already pining for the weekend, but nevertheless we soldier on and try to start the week off right. Sometimes the beginning of the week has us flirting with those long-forgotten New Year's resolutions on a smaller scale (you know, where we said we'd give up sugar/ carbs/ chocolate/ for a ridiculously unrealistic amount of time). By Tuesday we're halfway through our blueberry muffin when we realize that our intentions went out the window and whatevs, let's try again next week. This Monday Blues Blueberry Smoothie will get your week off to a good start. So let's keep Monday rolling on a healthy note and we'll play Tuesday by ear!



This makes a great afternoon snack and the ingredients are easily interchangeable. You could use regular milk or coconut water instead of almond milk, add chia seeds, or perhaps a spoon of almond butter for a more filling smoothie and extra protein. We used to follow smoothie recipes but now it's just a matter of what the fridge has to offer and you'll soon get the knack!


For one large smoothie:

  • 1 cup (100 g) blueberries (fresh or frozen)

  • 1 cup (235 ml) almond or coconut milk, unsweetened

  • 1/2 a banana (frozen ones give a nice creamy consistency) * see tip

  • 1/2 cup (100 g) frozen pineapple chunks (this is a great shortcut - no need to cut up a pineapple!)

  • 1 tablespoon ground flaxseed

  • 1 tablespoon hemp seeds

* If you have bananas that are getting a little too ripe for your liking, peel and slice them. Place them in a freezer bag, and when it's smoothie time simply add a few slices to your blender.


Put everything in a blender and blitz until smooth. Serve in a tall glass with a reusable straw.
