Here’s a Lime & Mint Pop to brighten your day, or go ahead and add a little rum to the mix and we’ll call it a Mojito Popsicle and make it 'Thirsty Thursday'!
These are really easy to make, if you don’t have popsicle moulds, you can freeze the mixture in little ramekins and scrape away with a fork or spoon, which is just as enjoyable as eating them off a stick! This is also a great one to make ahead for easy entertaining. We love the zingy tartness of lime, but if you like it more on the sweet side, reduce the lime juice by 2 tablespoons. xoxo Kirsty
Ingredients for 8 popsicles
2 cups (475ml) water
2/3 cup (125g) sugar
zest of 2 limes - 1 peeled into strips with a vegetable peeler; the other finely grated
3 sprigs of mint (12-15 leaves)
3/4 cup (175g) lime juice*, from about 6 limes, it depends on how juicy they are! Include the limes you zested earlier.
2-3 tablespoons (30-45ml) rum, optional
*If you prefer a sweeter lime flavor than a really tart one, reduce the lime juice by 2 tablespoons.
In a heavy bottomed saucepan, bring the water, sugar, and lime strips (from one lime) to a soft boil. Stir occasionally until the sugar has dissolved, then boil for a minute longer. Remove from the heat, and add 2 mint sprigs. Set aside to cool and steep for an hour.
When cool, add the finely grated lime zest, lime juice, and rum, if using. Tear up the leaves from the remaining mint sprigs, and divide them amongst the popsicle moulds. Carefully pour in the lime mixture, dividing it equally amongst the moulds. Freeze for at least 6 hours, if you’ve added rum it will take a bit longer.
Pull up a chair in the summer sun and enjoy!
