Now here’s a cocktail that’ll make those sweltering days melt away. This Lavender-Thyme & Vodka concoction is the answer to those moments when it’s just so hot, that you don’t know what you want to drink. Once you’ve made the magical simple syrup (we suggest you at least double the batch, it’s always good to have on hand!) the rest is a cinch. The syrup would also be delicious with prosecco, iced tea or just plain seltzer. So let’s raise our glasses to summer!!
For the simple syrup:
3/4 cup (145 g) sugar
3/4 cup (175 ml) water
1/4 cup (12 g)lavender buds
6 sprigs of thyme
Combine the sugar and water in a saucepan and bring to a soft boil, stirring from time to time. When the sugar has dissolved, take the pan off the heat and add the lavender and thyme. Set aside and allow it to steep whilst it cools to room temperature.
When it’s cool, strain through a sieve into a clean glass jar and refrigerate until needed.
Per 8 fl. oz. cocktail:
1 tablespoon (15 ml or 1/2 fl. oz.) lavender-thyme syrup
2 tablespoons (30 ml or 1 fl. oz.) vodka
A squeeze of lemon juice
150 ml (5 fl. oz.) lemon flavored seltzer (sparkling water) to fill the glass
Berries to decorate
Add ice cubes to a glass, then add syrup, vodka and a squeeze of lemon. Top with seltzer and give it a swirl with a stirrer. Enjoy!
