Endive, Pear & Crispy Prosciutto Salad

Salads can be less appealing to some of us in the cold, wintery months, but add some crispy prosciutto and you’ve got my attention. This Endive, Pear and Prosciutto Salad has a hint of sweetness from the white balsamic dressing, a refreshing bite from the pear, and of course, the salty satisfaction from the prosciutto. Prosciutto has half the fat and calories of bacon, so it definitely is in line with those ‘healthier you’ resolutions!



Ingredients for 2 servings:

  • 4 slices prosciutto

  • 3 Belgian endives, cut into bite sized pieces

  • 1/4 cup (25 gr.) walnut halves

  • 1 pear, washed, cored and sliced

  • 1 tablespoon of chives, chopped

For the dressing:


  • 1/4 cup (2 fl.oz. / 60 ml) extra virgin olive oil

  • 2 (1 fl.oz. / 30 ml) tablespoons white balsamic vinegar

  • 1/4 teaspoon salt

  • 1/8 teaspoon pepper

  • 1 tablespoon (1/2 fl.oz. / 15ml) honey

  • a squeeze of a wedge of lemon

Preheat the oven to 350F (180C). Lay the prosciutto onto a baking tray and bake for 10 minutes until crispy. Set aside.


For the dressing, combine all the ingredients into a jar and close the lid tightly. Shake away for 10-15 seconds until emulsified.


In a salad bowl, bring together the endive, prosciutto, walnuts and pear slices. Drizzle over the dressing and sprinkle with chives. Here’s to a healthy 2019!
