We cannot sing the praises of homemade ‘slaw enough! This Colorful Coleslaw with shredded red cabbage, nappa cabbage and carrots is crunchy, tangy and a complete powerhouse!💪🏼🙌🏼 Cabbage is chock full of vitamins, minerals and antioxidants and gut-friendly to boot. Carrots are an excellent source of vitamin A, which is super important for your immune system. Kind of what’s needed right now at the tail end of winter, with everyone feeling a bit run down. Serve it as a side with dinner or have it for lunch with an egg and some seeds sprinkled on top. We’ve used our homemade Mediterranean Aioli for the coleslaw dressing, but feel free to use store bought.
Ingredients
Serves 4 as a side
1 cup shredded carrots
1 cup shredded red cabbage
1 cup shredded nappa cabbage
1 tbsp fresh cilantro or flat leaf parsley, plus more for garnish (optional)
Dressing
1/3 cup aioli (Here’s the link to our recipe: Mediterranean Aioli. If you’re using store bought, add a teaspoon of minced garlic)
1/8 cup apple cider vinegar
1/8 cup unfiltered apple juice
1/4 teaspoon of salt
Freshly ground pepper to taste
Instructions
In a small bowl, whisk all the dressing ingredients together until thoroughly combined.
Mix the shredded carrots, red cabbage, nappa cabbage and cilantro (or parsley) together. Pour the dressing over the top and combine. Finish off with a sprinkling of cilantro/parsley.
