How come I have never tried a Chaffle before now? Under what rock have I been hiding?
In case you’ve been hiding underneath the rock next door, a Chaffle is a cheese & egg waffle. So deliciously crispy, so simple, sooo my new favorite lunch! Two basic ingredients (can you guess what they are? 🤔😁) with endless possibilities for variation. My version today was made with a kick of dried chipotle flakes (still reveling in my wonderful find!) and a pinch of smoked paprika for even more depth of flavor. Served it (to myself, coz I’m fancy like that! 😂) with the Confit Tomatoes I made the other day and a side of arugula and could not have been a happier camper.

Ingredients
Makes 2 chaffles, feel free to double or triple!
2 large eggs
1 cup shredded cheddar or mozzarella
1 tsp dried chipotle flakes
1 pinch smoked paprika
1/4 tsp salt if using moarella, omit if your’re using cheddar
cooking spray
Instructions
Heat up your waffle iron.
Whisk the eggs thoroughly with a whisk or fork. Add the remaining ingredients and stir to combine.
Spray the waffle iron with cooking spray. Pour half of the batter into the waffle iron. Cook for 3-5 minutes until crispy. Remove carefully and place on a wire rack to crisp up further. Repeat steps for the second chaffle.
Serve with a side salad for lunch or some bacon for a hearty breakfast. Enjoy!
