Don’t knock it ’til you try it!
Hey - It’s Kirsty here! There are very few foods that I really don’t like: Canned tuna, cottage cheese and beets are the ones that spring to mind. I will eat them out of politeness if I’m at your house, but you may find me quietly gagging behind a curtain. However, I have recently discovered that I really don’t mind drinking beet juice - weird, huh? Donata, on the other hand, is a fan, and will eat them any which way. When I told her about this concoction, I was expecting a, “sounds revolting,” but instead got a, “mmmmm... sounds delicious!”
I’m slightly anemic and I wanted to add more iron-rich foods in my diet - that’s where the beets come in. So I bought a bunch, juiced them with some apples and was pleasantly surprised by the result. Then I became even more brave and put them in a smoothie - it didn’t taste of dirt!
Here’s the recipe that evolved from many different versions. Frozen cherries are pretty easy to come by and they’re already pitted which is a bonus. They also give the smoothie a creamier consistency, so it’s really a win-win situation. Cheers to you and your health!
1 cup frozen cherries
1 beet, peeled and cut into chunks
1 cup coconut water (regular water will do too)
5 mint leaves
1/4 cup coconut yogurt (regular yogurt if you’re a fan)
Add all the ingredients to a blender and blitz away until a smooth consistency is reached.
