Ingredients for 2 cups of simple syrup:

  • 2 cups of unsweetened pomegranate juice

  • 2 cups of sugar

  • 1 teaspoon of lemon juice

  • 10 slices (roughly 1/4 inch or 5mm thick) of fresh ginger

Put all in the ingredients in a pan. Heat and stir until the sugar has dissolved. Bring to a boil for a couple of minutes, then take off the heat. Allow the ginger to steep in the syrup for a couple of hours until cool, then strain out the ginger. Transfer to mason jars and keep in the fridge for up to a month.
